Yes I said it, double chocolate protein cupcakes. What more could you ask for on a cold winters day? Maybe a cup of Chai tea to go with them? Whatever your beverage of choice, you’re going to love these cupcakes.

We had some training recently from Matt, the founder of White Wolf Nutrition, he was very generous with the samples. This Australian made and owned protein range tastes great as is, but I couldn’t wait to get home and try them in some baked goods.

The recipe is quick and simple and packs a nutritional punch. You can make a batch of these and freeze them ahead of time. You don’t need to add the extra chocolate chips, but I wanted to up the decadence factor.

I love almond meal, it has quite the nutritional advantage over other more processed flours. Almonds are high in mono-unsaturated (‘good’) fats, protein, magnesium, potassium, zinc and vitamin E. Although they are classifed as high energy foods (meaning high calorie), they compensate by helping to keep us fuller for longer. There are studies showing that regular intake actually helps to regulate body weight and balance blood sugar.

Raw Cacao is made by cold pressing the unroasted cocoa beans, This ensures the beneficial enzymes and anti-oxidants are kept intact. It is also a good source of minerals such as magnesium, potassium, iron, zinc and manganese. Its been shown to be a mood enhancer, it contains the chemical phenylethylamine, which is known as the ‘love drug’. This chemical is naturally produced in the body and influences our ‘happy hormones’ such as dopamine and serotonin.

Double Chocolate Protein Cupcakes
These protein cupcakes are a great addition to any lunchbox. They are low in refined sugar, high in protein and pack a nutritional punch.

  1. Preheat oven to 160 C /320F.
  2. Line a standard cupcake tray with cupcake liners.
  3. Combine all dry ingredients in a bowl (Almond Meal, Protein, Cacao, Baking Powder, Vanilla).
  4. Combine the remaining wet ingredients in a separate bowl.
  5. Add wet ingredients to dry ingredients and mix until smooth, fold through chocolate buttons at this stage if using.
  6. Spoon mixture into cupcake tins.
  7. Place into middle shelf of oven and bake for approximately 25 minutes, until puffed up and cooked through (Inserted skewer should come out clean).
  8. Serve as is or go crazy with toppings.
